It's called Skyhawk. And you sit in a pod that slowly turns around the center tower, and you use a joystick to do barrel rolls.

^^They can't bring Yankee Clipper back because Boomerang Bay is there. I've only been to CGA, so I can't say anything about SFGam. As for the themeing, Paramount's definitely got rid of it for the Santa Clara park.
